Okra Curry

Ingredients

okra-250 gm

shallots-8

tomato-1

green chilly-2

garlic-3

ginger

tamarind- lemon size

curry leaves

turmeric-1 tsp

chilly powder-3 tsp

fenugreek powder-1/4 tsp

coconut oil-4 tbsp

mustard-1 tsp

salt

Preparation

Wash okra, wipe out water, then chop it, add a little, turmeric, chilly powder and salt, mix well. Heat oil in a pan, add okra, then saute it well. Heat oil in a clay pot, add mustard, let it pop well, then add crushed shallots, garlic, ginger, tomato, green chilly and curry leaves, saute all well, next add masala powders, combine well, now add tamarind juice, boil it well, add salt, next add okra, then cook it well.

Butterscotch Falooda

Ingredients:-

For Butterscotch Sauce:-

Sugar,

Salted Butter,

Fresh cream,

Milk .

For Butterscotch Praline:-

Sugar,

Butter,

Cashew Nuts.

For Falooda:-

Butterscotch Sauce,

Vermicelli or Falooda sev,

Milk,

Condensed milk,

Black Couscous/Sabja seeds,

Fruits,

Nuts,

Raisins,

Butterscotch Praline,

Tutti Frutti,

Butterscotch Ice cream.

Preparation

For making butterscotch sauce, caramalise sugar in a pan, then add butter, next add cream+milk mix, boil well and make a thick sauce, keep this aside.

Next, prepare praline, for that, caramalise sugar, then add cashews, after mixing it well, allow it to cool enough, then crush it well.

Boil milk with sugar and condensed milk, then cool it well, next cook vermicelli, and keep aside.

Take serving glasses, prepare layer of fruits, vermicelli, butterscotch sauce, soaked kaskas ,nuts and milk, finally add butterscotch icecream, then serve it.

Sesame Balls

Ingredients

black sesame- 1 cup

coconut-1 handful

jaggerry-2

water-1/4 cup

salt-1 pinch

Preparation

Heat a pan, add sesame seeds, roast it until it starts crack, then keep aside. Dry roast coconut for 1 minute, then keep aside. Melt jaggerry with water in a pan, add coconut, sesame seeds and a pinch of salt into it, mix all well until it become dry, then turn off flame. Once the heat gone , make small balls from it.

Boiled Colocasia

Chembu puzhukku is a very easy to make traditional side dish of Kerala. Yam is one of the healthiest root vegetables which is rich in vitamins, minerals and fiber. Let’s check how to prepare the special dish.

Clean colocasia, wash throughly in water, then add it to a large vessel, pour water and salt, and boil it well. Once it cooked enough, strain water.

Crushed kanthari mulak with shallots, salt and a little oil is the best side dish.

Bilimbi Curry

Ingredients

1.Bilimbi(irumban puli)2 hand full chopped

2.Ginger-1/2 inch size-5nos

3.Garlic-6 cloves(big size)

4.Shallots-5-6(big size)

5. Fenu greek powder-1/4 tsp

6.Jaggery-5 cubes melted with little water.

7.Mustard seeds-1 1/2 tsp

8.Green chilly-10 nos

9.Coconut oil-4tbsp

Preparation

Heat a clay pot, add 4tbsp coconut oil. Add chopped ginger and fry until it become golden colour. Fry green chilly same as ginger. Ginger and green chilly keep in a tissue paper or normal news paper. To remove exess oil content. Then add 1 and half teaspoons of mustard seeds into same oil. Then add shallots, garlic. Saute these till golden colour. Then, add bilimbi stir. Add 1 tsp of salt. Stir well. Cover it with a lid. Dont add water. Because Bilimbi itself contain water. Then grind fried ginger and green chilly. Keep it aside. Melt jaggery with little water. Add melted jaggery after bilimbi well cooked. Then add powdered ginger and green chilly, fenu greek powder. Stir it until it become thickened. Do not let it too thickened. Because it will thicken more after cooling. Now tasty Bilimbi puliyinji is ready.

Bread banana Snack

Ingredients

bread slices-5

Banana-2

ghee-1 tbsp

cashews andkismis

egg-2

cardamom-2

sugar-5 tsp

milk-1/2 cup

Preparation

Heat ghee in a pan, add banana pieces, saute it well and keep aside. Roast cashews and kismis in ghee, then add above the banana. Break 2 eggs to a mixie jar, add cardamom , sugar and milk, blend it well, then pour it to the banana mix, combine all. Take bread slices, remove centre portion. Heat a pan, put the bread, add banana mix in centre of the bread, add removed part tightly above the bread, cook both sides well.

Kannur Special Breakfast

Ingredients

raw rice-1 cup

boiled rice-1 cup

egg-1

oil

Preparation

Add soaked rice, boiled rice, egg, salt and water to a mixie jar, grind it into fine thick batter, transfer the batter to a bowl, mix it with a spoon. Heat oil for deep frying, then add small quantity of batter with your fingers to the oil, fry it well.

Banana snack

Ingredients

ghee-2 tbsp

banana-2

cashews and kismis

cardamom

Preparation

Heat ghee in a pan, add banana, saute it for a minute, then keep this aside. Add more ghee to the pan, add cashews, kismis and cardamom, roast it for 1 minute, next add coconut, mix all together, add banana, combine all, add sugar into it, mix it again , then turn off flame.

Chicken Manthi

Ingredients

for marination

chicken -1 kg

manthi masala-2 tbsp

for rice

water

basmati rice-1 kg

Preparation

Take chicken in a large pan, and marinate it with the masalas in the list, keep this aside for 1 hour. Then fry it in the same pan. Boil water with whole spices, dry lemon, oil, and salt, then add rice, cook rice well, then strain it, add the rice above the chicken, spread food color mix, add green chilly, then smoke the rice with charcol for 5 minutes, now its ready.
