Soft Chapathi tips

Ingredients

wheat flour-2 glass

salt

lukewarm water

oil-1 tbsp

Preparation

Take wheat flour in a bowl, add salt, mix well, then pour lukewarm water and oil, mix it all, then knead it well, transfer the dough to a plate, knead it with both hands, then divide the dough into equal small balls. In a chapathi pressure add a little flour, then roll chapathi with the roller, make thin layer. Heat a tawa, add chapathi, once bubbles come out, flip it to another side, cook it well.

Varutharacha Ayala Curry

Ingredients

mackerel fish-1/2 kg

for roasting coconut

coconut oil-2 tsp

coriander seeds-1 handful

shallots-3

garlic-3

coconut and curry leaves

chilly powder

For curry

oil

onion-1/2

green chilly-2

ginger garlic paste-1 tsp

tomato-1

salt

turmeric

water

tamarind juice

pepper powder

curry leaves

Preparation

For roasting coconut, heat oil in a pan, add coriander seeds, after 1 minute of roasting, add coconut, garlic and ginger, mix it well, cook until coconut turns brown, next add chilly powder and green chilly, heat masala powders well and turn off flame. Grind the mix with water after the heat is gone.

Heat oil in a clay pot, add onion and green chilly, saute it well, then add ginger garlic paste, saute it again, then add tomato, after mixing it well, add masala powders, pour water , add salt and boil it well, add salt, then add fish, after cooking it well add coconut paste and water, combine all, boil it well, add tamarind juice into it, let it boil , finally add curry leaves and turn off flame.

Momos

Ingredients

for cooking chicken

boneless chicken pieces-

soy sauce- 1 1/2 tbsp

red chilly sauce1 – 1tsp

salt

for filling

olive oil-1 tsp

garlic-4-5

onion-3

soy sauce-2 tsp

red chilly sauce-2 tsp

salt

pepper powder-1 tbsp

coriander leaves

for dough

maida-2 1/2 cup

salt

water

Preparation

Cook chicken pieces with sauces, and salt, add oilve oil after cooking it well, then crush it in a mixie jar. Heat oil in a pan,add garlic, saute it for a minute, next add onion, after sauting it well add sauces and salt, mix well, add chicken and pepper powder, combine well, next add coriander leaves, then turn off flame. Prepare dough with maida, salt , water and some oil, then divide it into small balls, flatten each balls, then add filling, fold it like momos, then steam all in a steamer.

Parotta Making Tips

Porotta is Keralite’s favourite dish. The making of porotta is a little difficult task,. Not everybody is familiar with making of porotta. Here is a simple tip to make wheat layered porotta. Idiyappam maker is available in every house, fill the porotta dough in the idiyappam maker with large holed mould, don’t forget to apply oil before filling it, then close the lid and press it to a plate, roll it with a roller, now its ready to cook. Heat a tawa, add porotta, cook both sides well, after cooked all tap it tightly with your hand.

Beetroot juices

Ingredients:

*Boiled beetroot – 5 pieces

*Cold milk – 3/4 cup

*Water – 1/2 cup

*Suger – 2 1/2 tablespoon

*Cardamom – 2 nos

*Boiled beetroot- 5 pieces

*Cold milk -3/4 cup

*water – 1/2 cup

*Suger – 2 1/2 tablespoon

*Vannila essents – 2 drops

*Biled beetroot paste – 1 tablespoon

*Cold water – 1 1/4 cup

*Sugar – 2 1/2 tablespoon

*Lime – 1/2 of 1

*Boiled beetroot paste – 1 tablespoon

*Condensed mipk – 1 tablespoon

*Cold water- 1 1/4 cup

*Sugar – 2 tablespoon

Preparation

Boil beetroot in a pressure cooker, then grind it with milk, add cardamom, lemon, condensed milk and vanilla essence as you like, then strain it to serving glass.

Masala Dosa

Ingredients

for dosa

raw rice- 3 glass

glass-1 1/2 glass

cooked rice-2 tbsp

salt

for masala

potato-3

turmeric

salt

water

onion-2

carrot-1

curry leaves

ginger garlic

green chilly

mustard

urad dal

turmeric

Preparation

Wash rice and urad dal together, then soak it for 3-4 hrs, after that grind it with cooked rice and make a fine paste, pour the batter to a bowl, rest it overnight. Add salt to the raised batter, mix it well.

For masala, boil potato with salt and turmeric, then remove it from water and mash it well. Heat oil in a pan, add mustard , let it pop , then add urad dal, roast it for a minute, then add ginger, garlic and green chilly, saute it until the raw smell gone, next add onion, mix it all , then add salt and turmeric, combine well, add mashed potatoes, mix it with masalas, then turn off flame.

Fruit salad

Ingredients

milk-1 glass

water

dry fruits

Preparation

Mix rice flour, sugar and water in a pan, mix well, then turn on flame, stir it well until it become thick, now add milk and a pinch of turmeric, mix it again for 2 minutes, then turn off flame, refrigerate it for 2-3 hrs, then add chopped fruits, nuts and dry fruits, mix all and serve it.

Preparation

Soak rice and urad dal together for 2-3 hrs, then grind it with milk, salt, sugar and some water, make a smooth batter, transfer it to a bowl. Heat oil in a pan, pour the batter with a small spoon, fry it well.

Grapes Halwa

Ingredients

Red Grapes – 500 gms

Sugar – 1 3/4 Cup

Corn Flour – 5 Tbsp

Water

Ghee

Cashew Nuts & Almonds

Preparation

Cook grapes with water. Once the heal gone, grind it into fine paste, then strain it into a pan, mix corn flour and water together in a bowl, then add to grapes mix, cpmbine well. Put the pan to a stove, stir it well, add sugar after the mix become thick, stir it without stopping, next add ghee, continue mixing, add more ghee, mix it until it become thick and non sticky, add nuts, combine well, then transfer it to a plate, tightly set it with a spoon, rest it until it become thick, then cut it.

Chicken Fry

Ingredients

chicken-1

corn flour-1 cup

coriander, mint and curry leaves-1 handful each

garlic-1 handful

tomato sauce-5 tbsp

pepper -2 tbsp

green chilly-10

chilly powder-4-5 tbsp

turmeric-1 tsp

egg

oil

curd-1 cup

Preparation

Grind leaves, curd, chilly, masala powder and garlic together, then marinate chicken with this masala. Rest this for 5-6 hrs. After that add corn flour and sauce, mix it again. Now its ready to fry. Deep fry chicken pieces in hot oil.
