Preparation

Take a bowl, add gram flour, salt, hing powder, and chilly powder, combine all well, then add oil, then pour a little water, knead it well and make a soft dough. Heat oil in a pan, roast peanut, gram dal, curry leaves and garlic separately, and keep this aside. Fill mixture dough in an idiyappam maker, then press it to oil, then fry it well, finally mix all roasted items together, add more chilly powder and salt.

Muringakka Masala Curry

Ingredients

kashmiri chilly powder-1 tbsp

meat masala-3/4 tbsp

Preparation

Heat oil in a pan, add mustard, let it pop well, then add ginger and garlic, saute it in oil, then add onion, green chilly, and curry leaves, saute all well, add tomato, cook it until it become soft, next add salt and masala powders, after mixing it well add drum stick, coat masala well, pour a little water, then cover the pan and cook it well.

Jackfruit seeds sweet

Ingredients

Jack fruit seeds — 150 grams ( 25 nos)

dates — 225 grams

white chocolate — 100 grams

milk chocolate — 50 grams

white sesame seeds — 1 tablespoon (optional)

Preparation

Soak dates for 2-3 hrs, then remove seeds and keep aside. Dry roast jack fruit seeds, then grind it into fine powder, add dates, crush it again, transfer the mix to a bowl, mix well then separate it to two. Mke long shaped rolls, put it in a mould, spread white sesame seeds, at the centre of the rolls, make a design with chocolate compounds, then keep this in fridge, after 1 hour, take it and cut it into small pieces.

Ingredients

Wheat flour -200 gram

Semoline -100 gram

Oil or ghee -1 tbs

Sugar -1 tsp

Salt as per taste

Preparation

Soak semolina for 10 minutes, then add flours, salt, sugar and water, knead it well and make soft dough, rest the dough for 10 minutes, then divide it into equal small balls, flatten the balls into thin layer, then fry it well.

jaggerry-250 gm

water-1/2 cup

cardamom-3

cumin-1/2 tsp

sesame seeds-1 tsp

Preparation

Soak rice for 3-4 hrs, then grind it with melted jaggerry , cumin and cardamom, and make a coarse paste, pour it to a bowl, add maida, salt, sesame seeds, and coconut pieces , mix well, then rest the batter for 6 hrs, then heat oil , then pour the batter with a laddle, fry neyyappam well.

Ingredients

Preparation

Wash dal well, then soak it for 2-3 hrs, take 2 tbsp of dal, keep this aside. Crush dal and make a coarse paste, then transfer it to a bowl, add shallots, ginger, green chilly, salt , dry chilly, curry leaves and hing powder into it, add whole dal, knead all well, then make vadas, now you can fry it in hot oil.

Onion 2 medium finely chopped

Green chilli 2 finely chopped

Ginger garlic paste 1 Tsp

Turmeric powder 1/4 Tsp

Red Chilli powder 1/2 Tsp

Chicken masala 1/2 Tsp

Egg 2

Salt as required

Chopped Coriander leaves

For covering

Water 1 cup

Wheat flour 1cup

Salt 1/4 Tsp

Coconut oil 1 Tsp

For outer covering

Bread crumbs

Maida 1/4 cup

Water 1/2 cup

Preparation

Heat oil in a pan, add onion and green chilly, saute it well, then add ginger garlic paste, mix it again, then add masala powders, mix until the raw smell gone, add salt, next add egg, scramble it well, add coriander , then turn off flame.

Boil water in a pan, add salt and oil, then add wheat flour, mix it well, transfer it to a plate, once the heat gone, knead it well and make a soft dough, divide it into small balls, flatten it into medium thick layers, cut it into small round shaped chapathis, add filling, then fold it as you like. Dip all in maida water mix, then coat it in bread crumbs, now fry it in hot oil.

Ulli sambar

Ingredients

Toor dal – 3/4 cup

Turmeric powder – 1/4 tsp

Salt

Turmeric powder – 1/4 tsp

Asafoetida – 1 small piece

Shallots / Kunjulli – 1 cup

Tamarind – gooseberry sized

Tomato – 1 medium

Green chilli – 2

Kashmiri chilli powder – 1 tsp

Sambar powder – 2 1/2 tbsp

Coriander powder – 1 tsp

Dried red chillies – 2

Curry leaves

Mustard seeds – 3/4 tsp

Coriander leaves

Oil

Preparation

Cook dal with water, salt and turmeric and water in a pressure cooker. Heat oil in a pan, add shallots and green chilly, saute it for 3 minutes, then add tomato, turmeric and hing, mix all well, now add tamarind juice, boil it well, now add cooked dal, combine all, add more water if required, boil it for 2-3 minutes, then turn off flame. In a small bowl, add masala powders and some water, mix it well and keep aside. Heat oil in a pan, add mustard, pop it well, then add dry chilly and curry leaves, then add masala mix, mix it until the raw smell gone, then pour water, boil it well, then add it to the sambar, add salt, mix all well, finally add some coriander leaves.
