Ingredients

For Mutta Surka

Rice:2 cups( ponni rice , white rice )

Cooked rice:1/2 cup

Egg: 2

Salt

( some carrot, coriander leaf, green chilli)

For Beef Kuruma

Beef:1/2 kg

Onion:2

Green chilli:5

Ginger: small piece

Coriander leaf

Salt

Pepper powder:1 tspn

Garam masala:1/2 tspn

Coconut milk:1 cup

Preparation

For mutta surkka, soak rice for 5 hrs, then grind it well, add cooked rice, salt and egg, blend it again, then pour it to a bowl , add chopped vegetables, mix well. Heat oil for frying, pour the batter with a small laddle, fry it well.

For beef kurma, add beef, green chilly, onion, ginger, masala powders, salt and water to a pressure cooker, cook it well. Then add carrot and potato, cook it for 1 whistle, once the pressure gone, open lid and add coconut milk, let it boil, then turn off flame.

Chicken Cutlet

Ingredients

potato-2

chicken cooked-250 gm

oil

onion-2

green chilly-2

curry leaves

salt

ginger garlic paste-3/4 tsp

garam masala-1/2 tsp

pepper powder-1/2 tsp

turmeric-1/4 tsp

bread crumbs

egg

oil for frying

Preparation

Heat oil in a pan, add onion and green chilly, saute it well, add salt and masala powders, mix it well, next add crushed chicken , combine all well, add boiled and mashed potato, mix all together for 1-2 minutes, then turn off flame, once the low , make cutlets with a bottle cap, dip all cutlets in egg mix, then coat bread crumbs, now fry it in hot oil.

Kai Pathiri

Ingredients

rice flour-2 cup

salt

water-2 1/2 cup

coconut-1 cup

shallots chopped-10

cumin powder-1/2 tsp

coconut oil

Preparation

Boil water with salt, shallots, cumin powder, and coconut, then add rice flour after boiling it well, mix it about 5 minutes in low flame, add oil, transfer it to a plate, knead it well and make a soft dough, divide it into large balls, then flatten it with your palms, then cook it in tawa.

Egg Roast

Ingredients

oil-2 tbsp

fennel seeds-1/2 tsp

whole spices

ginger garlic crushed

onion-3

salt

curry leaves

tomato-1

turmeric-1/2 tsp

chilly powder-1 tsp

coriander powder-1 tsp

garsm masala-1/2 tsp

pepper powder-1/2 tsp

meat masala-1/2 tsp

boiled egg

coriander leaves

Preparation

Heat oil in a clay pot, add whole spices, after roasting it well add ginger garlic crushed, saute it for a minute, next add onion, saute it until it become brown, add tomato, mix it well. Dry roast masala powders in another pan, then add to curry, combine well, next add boiled egg, add salt and hot water, boil it well until it become thick, then turn off flame.

Ifthar Special Sago drink

Ingredients

Cooked Sago seed:1 cup

Milk: 1 1/2 cup

Sweetened Condensed milk: 3/4 cup

Fresh cream/ whipping cream :100 gm / 1 cup

Rose syrup/ strawberry syrup: 1 1/2 tbs

Tender coconut water : 1 1/2 glass

Tender coconut pieces : 1 cup

Coloured jelly cubes

Ice cubes

Preparation

Prepare jellys with jelly dessert, then cut it into small square shapes. Cook sago , then strain water. Add milk to cooked sago, then add thick cream, condensed milk, tender coconut , rose syrup, tender coconut pulp, and jellys, mix all well, then serve it.

Onion Egg Bajji

Ingredients

onion-3

salt

ginger, garlic and green chilly-1 tbsp

curry leaves

coriander leaves

rice flour-1/4 cup

gram flour-1/4 cup

maida-1/2 cup

masala-1/2 tsp

pepper powder-1 tbsp

red chilly powder-1 tbsp

water

boiled egg

oil for frying

Preparation

Add finely chopped veggies, flours, masala powders and salt in a bowl, add water, mix well, then make a thick batter. Cut boiled egg into 4 pieces, coat the pieces with the batter, then fry it well.

Mushroom Masala

Ingredients are.

1.Mushroom-250 gm

2.onion – Big 1

3.Tomato-2 small

4.Ginger-Few

5.Garlic-Few

6.Ginger garlic paste-As needed

7.Green chilly-4 or 5

8.S.onion_10 piece

9.Kasuri methi- Few

10.Chilly powder -1 tea spoon

11.meat masala-50 gm

12.Curry leaves-As needed

13.Spices – 10 gm each

14.Lemon juice-Few

15.coconut oil-Few

16.Salt -As needed

17.Turmeric powder – Few

Preparation

Heat oil in a pan, add whole spices, after roasting it well add ginger, garlic and chilly, saute it well, next add onion, saute until it become golden brown, now add masala powders, mix it well, now add salt and tomato, Add a little water, cook until it become soft, add mushrooms into it, mix it with masala, add kasoori meti and lemon juice, cook it well, then turn off flame.

Rice Vada

Use leftover rice for making a delicious evening snack.

Grind cooked rice into fine paste, then transfer it to a bowl, add salt, onion, green chilly, ginger, turmeric, cumin , pepper and rice flour, knead it well and make a slightly loose dough, rest it for sometimes, then make crispy vada with this dough.

Soft Dosa

Ingredients

raw rice – 1 1/2 glass

potato-2

cooked rice- 1 1/2 laddle

salt

Preparation

Wash rice well , then soak it for 3-4 hrs. After soaking it well, grind it with cooked rice, boiled potato and water, make a smooth batter, rest the batter overnight for fermentation. Add salt to the raised batter, mix well, then make soft spongy dosa.

Fish Pickle

Ingredients

fish-1 1/2 kg

turmeric-1/2 tsp

chilly powder-1 1/2 tsp

salt

oil

mustard

garlic-3/4 cup

ginger-3/4 cup

curry leaves

dry chilly-4-5

chilly powder-3 1/2 tbsp

turmeric-1 tsp

vinegar-3/4 cup

salt

fenugreek and hing powder

Preparation

Marinate fish with salt, turmeric, and chilly powder, then keep this aside for 1 hour. After 1 hour fry the fish pieces well. Heat oil in a pan, add mustard, let it pop well, next add ginger and garlic, roast it well, then take half of it in a mixie jar, grind it and keep aside. Add curry leaves to the pan, then add masala powders, next add vinegar, boil it well, add salt fish pieces, cook it until the gravy become thick, add fenugreek and hing powder accordingly, mix well, let the pickle cool enough, then store it in a air tight container.
