Easy Potato Curry

Ingredients

Potato-2

green chilly-6

onion-1

coconut-3/4 cup

fennel-1/2 tsp

water

turmeric-1/2 tsp

salt

water

curry leaves

coriander powder-1 tbsp

garam masala-1 tsp

dry chilly

curry leaves

mustard

coconut oil

Preparation

Add potato, onion, green chilly, curry leaves, salt, turmeric and water to a pan, then cook it well, add coriander powder and garam masala into it, mix everything well, grind coconut with fennel seeds and water, make a smooth paste and add to curry, add more water, then boil it, mash some potato pieces, once it boiled enough, turn off flame. Season curry with mustard, dry chilly and curry leaves.

Drum stick curry

Ingredients :

Jackfruit seeds – 1 Cup

Drumsticks – 2, chopped

Small Mango – 1, chopped

Tomato – 2, chopped

Turmeric – ½ Tsp

Red chilli powder – 1 Tsp

Salt

Water

Green chilli – 4

Curry leaves – 1 Sprig

Grated coconut – 1 Cup

Cumin – ½ Tsp

Garlic cloves – 2

Oil – 1 Tbsp

Dry red chilli

Preparation

Cook jackfruit seeds, drumstick, tomato, greenchilly, and curry leaves with salt, turmeric, chilly powder and water in a pan. Grind coconut with cumin, garlic and water, then add to curry, boil it well. Finally, season the curry with mustard, curry leaves and dry chilly.

Potato Pakoda

Ingredients

maida-2 tbsp

rice flour-2 tbsp

salt

oil-1 tbsp

Preparation

Grate potatoes, then wash it well, squeeze water from it, then add chopped veggies, salt, rice flour, maida and oil, knead it well and make a sticky dough, heat oil in a pan, add the dough little bye little in to the oil, then fry it well.

Cauli flower Masala

Ingredients

Cauliflower-1/2 of 1 small

Fennel seeds-1 tsp

Black peppercorns-1/2 tsp

Garlic-4

Ginger-1 inch

Onion-2

Tomato-1

Coconut oil-2 tbs

Turmeric powder-1/4 tsp

Kashmiri chilli powder-2 tsp

Coriander powder-1 1/2 tsp

Garam masala powder-1 1/2 tsp

Water-1 cup

Salt

Sugar-1 tsp

For garnishing

Capsicum

Preparation

Crush garlic, ginger , pepper and fennel seeds, then keep aside. Heat oil in a pan, add crushed items, saute it for a minute, then add onion, curry leaves and salt, saute it again until the onion become golden brown, now lower the flame and add masala powders, once the raw smell gone add tomato, mix it with masala, next add cauli flower, combine all, add a little water, then cook it well, add garam masala and salt, add more water, then cook it until it become thick, next add green chilly, capsicum and tomato, finally add some sugar, mix all, turn off flame.

Riceflour evening Snack

Ingredients

rice flour 2 tspn

potato 2

onion 1/2

ginger 1 tspn

curry leaves

garam masala 1/4 tspn

chilly powder 1/2 tspn

turmeric powder 1/4 tspn

bread crumbs 1/2 cup

corn flour 2 tspn

oil

salt

Preparation

Mash boiled potato in a bowl, then add finely chopped veggies, add masala powders, and salt, mix all well, add rice flour, mix it again, then make this a dough, divide the dough into small bites, dip this snacks in maida , water mix, after that coat it in bread crumbs, finally, deep fry it in hot oil.

Wheat flour Breakfast

Ingredients

wheat flour-1 1/2 cup

salt

water

coconut oil-1 tsp

cumin-1/2 tsp

curry leaves

onion-1

potato grated-1

coriander-1/2 tsp

chilly powder-1/2 tsp

turmeric

salt

ginger garlic paste-1/2 tsp

chicken masala-1/4 tsp

water a little

Preparation

Add wheat flour to a bowl, add salt and a little water, knead it well and make soft dough.

Heat oil in a pan, add cumin, wait until it pop well, then add onion, saute it well, then add masala powders, mix all, add a little water, mix all well , once it become dry, turn off flame.

Divide wheat dough into 4 parts, flatten it into thin chapathi, cut the chapathi into 4 pieces, add the filling in each piece, then fold it from one side to another, then put it in a pan, shallow fry it well.

Beetroot Pickle

Ingredients

beetroot-1 medium grated

tamarind and dates-lomon size

turmeric-1/2 tsp

salt-1 tsp

water-1/4 cup

ginger garlic-6 and green chilly-2

gingelly oil

mustard-1 tsp

hing

kashmiri chilly powder-1 tsp

fenugreek powder-1/4 tsp

vinegar-2 tbsp

salt

curry leaves

Preparation

Add grated beetroot to a pressure cooker, then add turmeric, salt and water, mix well, then cook it for 1 whistle. Soak tamarind and dates separately, then take tamarind pulp, grind dates in a mixie jar. Heat oil in a pan, add mustard, let it pop well, then add curry leaves, ginger, garlic and chilly, saute it well, next add masala powders, combine all well, next add beetroot, tamarind pulp and dates paste, mix all together, add salt, boil it well, add vinegar, cook it until it become thick, then turn off flame.

Ullivada

Ingredients

1. Onion – 500 gms(3 nos)

2. Chilli Powder – 1 tsp

3. Green Chilli – 1-2 nos

4. Curry Leaves – 1 sprig

5. Salt – 1 tsp

6. Ginger – 1 tsp(optional)

7. Maida/Wheat flour – 8-12 tbsp

8. Oil – as needed

Preparation

Slice onion into thin pieces, add salt, mix it well, then keep aside for 10 minutes, after that, remove water, then add other green chilly, curry leaves, chilly powder , and ginger, mix all, then add maida in batches, knead it well and make a sticky dough, take balls from it, just press it above, then add to hot oil, fry it well.
