Fried Chicken

Ingredients

for soaking

chicken-1 kg

butter milk

garlic paste-1 tsp

chilly powder-1/2 tsp

pepper powder-1 tsp

vinegar-2 tbsp

baking soda-1 pinch

for dipping

maida-1 cup

corn flour-2 tbsp

salt

chilly powder-1 tsp

garlic paste-1 tsp

egg-1

maida +salt +chilly powder mix for topping

oil for deep frying

Preparation

Add butter milk to a bowl, add salt, pepper powder, chilly powder, vinegar, garlic paste and baking soda, mix well, soak chicken in this mix for 6 hrs. Mix maida, chilly powder, garlic paste, egg, corn flour and chilly powder together , add water and make a thick batter. After 6 hrs, take chicken from the mix, dip it in the batter, then coat maida, chilly powder mix tightly, then fry it in hot oil.

Ration fried rice

Ingredients

ration rice- 2 glass

water

oil

salt

green chilly

carrot

beans

onion

ginger and garlic

potato-1

lemon juice-1 tbsp

crushed pepper -1 tsp

salt

soy sauce-1 tsp

Preparation

Soak rice for 2 hrs. Boil water with salt and oil, add rice , cook it about 80%, then strain rice from water. Heat oil in a pan, add finely chopped vegetables, saute it for 1 minute, add salt and lemon juice, then add rice , mix all well, add soy saute and crushed pepper , mix with rice, then turn off flame.

Orange Milk

Ingredients

orange-3

peanut-1 tbsp

sugar

milk-1/4 cup+1 cup

vanila essence-2 drops

Preparation

Remove seeds and peels of orange, then add to a mixie jar, add sugar, peanut and 1/4 cup of milk, blend it well, then pour the mix to a bowl, add milk and essence, mix well, then serve it.

Mutta Pathiri

Ingredients

rice flour-1 cup

egg-2

maida-1 1/2 cup

salt

Preparation

Mix everything in a bowl, add water little bye little, mix well and make a medium loose batter. Heat a pan, pour the batter, round the batter like dosa, cook both sides well.

Coconut milk Pudding

Ingredients

coconut milk-1/2 coconut

sugar

cornflower-1/4 cup

water-2 cup

Preparation

Add coconut milk to a pan, turn on flame, stir it continously, then add sugar, mix it until it melts completely, mix coconut milk and corn flour in a bowl, then add to the pan, mix well, cook it until it become thick, pour it to a bowl, once the heat gone store it in fridge for 2 hrs, then use it.

Fish Orotti

Ingredients

Oil

fish

for filling

onion-2

green chilly-3

ginger garlic paste

curry leaves

tomato-1

kashmiri chilly powder

coriander powder

turmeric

salt

cumin powder

garam masala powder

water-2 tbsp

For dough

soaked rice-1 cup

green chilly -2

grated coconut

fennel-2 tsp

ginger

turmeric-1/2 tsp

onion-1

rice flour

Preparation

Fry fish, then keep aside. Heat oil in a pan, add onion, green chilly and curry leaves, saute it well, next add ginger garlic paste, after mixing it well add masala powders, combine all , add a little water, once it completely absorb turn off flame.

Grind rice with coconut, ginger, green chilly, fennel, turmeric and onion, add water, grind it into fine batter, pour the batter to a bowl, add rice flour to the batter, mix it well, add more rice flour to the batter , make a soft dough, apply this above the banana leaf, add fish and masala, then fold it, finally, steam it well.

Kozhukkattai

Ingredients

Jaggery – 3/4 cup

Water – ¼ cup

Grated Coconut – 3 and 1/2

Cumin seeds – 2 Teaspoon

Cardamom powder – 2 Teaspoon

Dried Ginger powder – 1 teaspoon

Roasted Rice Flour – 2 cups

Salt – ½ Teaspoon

Coconut oil – 1 teaspoon

Sugar – 1/2 cup

Water – 1/4 cup

Preparation

Heat ghee in a pan, add cumin, then add jaggerry, coconut and water, cook it until it become thick, now turn off flame and let it cool. Prepare sugar filling like this.

Take a bottom thick pan, add rice flour, water, salt, sugar and oil, mix it without lumps, then turn on flame and mix it well, cook until it become dough consistency, then let it cool down, now take small portions from it, flatten it in your palms, add filling, then cover it , make ball shape. Finally steam it well.

Green gram Payasam

Ingredients

1. Cherupayar/Green Gram – 1 cup

2. Water – 4 + 3/4 cups

3. Milk – 2 cups

4. Sarkara/Jaggery – 300 gms

5. Cashews – 7 or 8

6. Raisins – 1 1/2 tbsp

7. Coconut Slices – 2 tbsp

9. Butter/Ghee – 2 tbsp

10. Rice Flour – 1 tbsp

11. Cardamom Powder – 1/4-1/2 tsp

12. Cumin Powder – 1/4-1/2 tsp

13. Dry Ginger Powder – 1/4-3/4 tsp

14. Salt – 2 pinch

Preparation

Melt jaggerry with water, strain it then keep aside. Cook green gram with water in a pan, then add jaggerry juice, boil it well, then add butter, after boiling it well add milk. Mix rice flour and milk, mix well , then add to payasam, mix well, then add masala powders and salt, let it boil well, finally, add fried coconut and cashews, mix all, then turn off flame.

Rice Balls

Ingredients

matta rice-1 cup

coconut-3/4 cup

jaggerry-3/4 cup

Preparation

Wash rice thoroughly 2-3 times, then dry it under sunlight. Heat a pan, add rice, then roast it until it pop well, then keep this aside, once the heat is gone, grind it into fine powder, add this powder to a bowl. Grind coconut and grated jaggerry together, then add this above the rice powder, mix all well, then make small balls, coat rice powder above the balls.

Poricha Pathiri

Ingredients

putt rice flour-1/2 cup

coconut-1/2

shallots

rice flour-1 1/2 cup

garlic-3

green chilly

cumin-1 tsp

boiling water-3 cup

salt

black sesame seeds-1 tsp

oil for frying

Preparation

Crush coconut and cumin together, then keep aside. Crush chilly, garlic and shallots. Heat oil in a pan, add crushed shallot chilly mix, saute it well, then pour hot water, then add salt, let it boil well, now add rice flours, mix it well, then transfer it to a bowl, knead it well by adding sesame seeds, then make soft dough, add coconut mix too, mix it again, flatten the dough into thick layer, cut it into small round shaped pathiri, then fry it in hot oil.
