Pazhampori

Pazham pori is an all time favorite snack of malayalees. It is also called “Ethakka appam”. It is an easy to prepare snack which does not require any great cooking experience.

Add 1/4 cup of sugar and 1/4 cup of semolina to a mixing jar and grind it well. Transfer it to a bowl and add a quarter cup of flour to it, Add a little turmeric powder and mix well. A thick battery can be prepared by adding a little water to it, Mix a pinch of soda powder and a squeeze of lemon juice in a bowl and add it to this batter. Take the banana and cut it into desired size. Dip each piece in this batter and fry it in oil.

First, heat oil in a pan, pop mustard, then add dry chilly and curry leaves, next add onion , saute it well, add ginger and garlic crushed into it, , mix well, then cover the pot to cook well, after 5 minutes, add masala powders into it, turmeric, chilly powder, coriander powder and garam masala, combine all, once the raw smell gone, add tomato and salt, mix until tomatoes are soft, next add chicken pieces, mix with masalas, cover the pan and cook it well, finally add crushed chillies, it is very optional, if you want more spicy, dont skip. Now curry is ready.

To prepare this, take a jar of mixer grinder and add soaked 15 dried chillies and 12 cloves of garlic in it. Add enough salt and a tomato then crush it. Heat a pan add coconut oil in it , add some dal and mustard seeds to it and crackle it. Add crushed chamanthi to it. Saute it well, then serve it.

Ammini Kozhukkattai

Ingredients

rice flour-20cup

water-2 1/2 cup

salt

coconut oil

shallots-1/2 cup

fennel-1 tbsp

coconut-1 cup

coconut oil

mustard

curry leaves

chilly flakes

shallots chopped

Preparation

Boil water and salt in a bowl, add rice flour to a bowl and pour boiling water into it. Mix well and keep aside. Add small onions, fennel seeds and coconut in a mixing jar and crush them. Add this to the rice flour and mix well.
Steam these balls in an idli pot and cook them well.Then pour some oil in a pan and heat it. Add mustard to it and when it crackles well, add small onions and curry leaves and saute well. Add crushed dry chillies and mix and add the cooked small balls to it, Once well mixed, serve.

condensed milk-1/3 cup

Preparation

Grind coconut pulp with a little water, then keep aside. Boil milk with sugar and condensed milk. Soak china grass in water for 10 minutes, then boil it well, after that add this to milk, combine all well, now turn off flame. Add coconut pulp paste to milk, mix all well, then transfer this to a glass mould, let it cool well, add some crushed badam and coconut pulp before serving.

•banana – Two

•Cardamom powder – one teaspoon

• grated Coconut – quarter cup

•Jaggery – 200 grams

•Water – 3/4 cup

•Wheat flour – two cups

• Cumin seeds – half teaspoon

•Baking powder – 3/4 tsp

•Salt – a pinch

•Black Sesame seeds – one teaspoon

Preparation

How to prepare

Take 200 grams of jaggery in a bowl, add three-quarter cup of water to it, melt it well, filter it and keep it warm. After pouring a teaspoon of ghee in another bowl, add the chopped fruit, cardamom powder and coconut flour and saute well. Now we can leave this sidelot aside. In another bowl, add two cups of wheat flour, half a teaspoon of cumin seeds, three quarters of a teaspoon of baking powder and a pinch of salt and mix well. After heating the jaggery juice we have melted earlier, we can pour it. Add some more water if needed.It should be thicker than the idli flour to mix it. Now let’s add the fruit mix that we prepared earlier. Add a teaspoon of sesame seeds and mix again. Pour it into a greased pan and cook it in a steaming pan on low flame for 15 minutes. A delicious snack is ready.
