Vettucake

Vettucake is Kerala traditional teashop snack. It is prepared with maida and milk powder. Lets see how to prepare its easy at home.

First prepare a mix of 8 tbsp sugar,1 egg, 3 tbsp of milk and 4 cardamom, add maida 1 cup, salt yellow food color and 1 tsp of baking soda, knead it well and make a soft dough, add ghee, knead it again, then rest the dough for 1/2 hrs. After that take the dough, roll it, then cut it like rectangular shaped small pieces, put cross marks in every bites, then deep fry in oil.

Kinnathappam

A traditional recipe which can be used as snack and breakfast. The recipe prepared with rice and coconut. Less ingredients and taste good.

Soak raw rice for 3-4 hrs, then grind it with 3/4 glass coconut, 3/4 glass cooked rice,1 tsp cumin, 10-15 shallots and required water, and make a fine loose batter. Add salt, then mix it well. Take a plate, apply oil, then pour batter, steam it well.

Coconut dosa and chammanthi

Lets see a tasty dasa without adding urad dal, and a special chutney.

For dosa, soak raw rice for 2-4 hrs, then grind it with 2 glass of coconut, 3/4 glass of cooked rice and water, make a fine batter, keep this aside for 10-12 hrs for fermentation. After that take the batter, add salt, mix it well, then make small dosas.

For chammanthi, heat oil in a pan, add white sesame seeds, cumin and urad dal 1 tsp each, roast it well, then add dry chilly and curry leaves, mix it until the dry chilly become roasted, then add 1 tomato and an onion, saute it again, then add masala, 3/4 tsp hing, 1/4 tsp turmeric, tamarind water, and 1 handful of coriander, mix everything, then turn off flame. Grind it after the heat gone, then add salt and season it with mustard and dry chilly.

Neyyppathiri

Hot water as required

Prepare a crush of:

Coconut -1cup(grated)
Onion/Shallot -1/2cup
Green chili-1big
Ginger-1inch
Fennel seeds-1/2tsp
Curry leaves

Preparation

Take rice flour in a bowl, add salt, mix it well, then pour hot water, mix with a spoon, let wait the heat gone, then knead it well and make a soft dough, add crushed coconut mix and some oil, mix it again, take a banana leaf, apply oil, then take a large ball of dough, put it in the leaf, then flatten it roundly , after that , drop it in hot oil, fry well.

Jaggerry Vattayappam

A flower like soft vattayappam….

Soak 1 cup raw rice for 4 hrs, then add to a mixie jar, add coconut, 1/2 cup cooked rice, pinch of salt, 1 tsp of instant yeast and water, then grind it into fine batter. Melt 2 jaggerry, after cooling it well add it to the batter, mix well. Rest the batter for raise. Take a plate, grease it with ghee or oil, pour the batter, then steam it well.

Golden raisins- 1/4 cup
Black raisins-1/4 cup
Dried Papaya (chopped) – 1/4 cup
Dried Pineapple (chopped) – 1/4 cup
Dried Cranberry – 1/4 cup
Dried Apricot (chopped) – 1/4 cup
Dried Cherry (chopped) – 1/4 cup
Dried blueberry – 1/4 cup
Grape juice – 1 cup
Orange Marmalade – 1 tablespoon
Mixed fruit Jam – 1 tablespoon
Orange Zest – 1 tablespoon
Lemon Zest – 1 teaspoon
Mixed nuts- 1/4 cup
Brown Sugar- 3/4 cup ( 150 grams )
Maida / wheat Flour – 1 ½ cup (190 grams )
Powdered cinnamon,cloves,nutmeg, cardamom – 1tsp
Unsalted Butter- 220 gms
Egg-3
Baking powder- 1tsp
Baking soda- 1/4 teaspoon
Vanilla essence- 1tsp
Salt- ¼ tsp

How to prepare

• Mix all the dry fruits, brown sugar, grape juice, butter, mixed fruit jam and orange marmalade in a heavy saucepan and cook for 10 minutes. Turn off the fire when it gets short.

• Then keep it aside to warm. Add 3 well-beaten eggs to this hot mixture and add nuts.

• Put flour powder, baking powder, nutmeg powder, nutmeg powder, patta powder and salt in a sieve and mix well. Grated orange peel and lemon peel can be added to this. Now add it to the previously mixed fruitscoot and mix it well.

• Pour this mixture into a greased cake tin lined with butter paper and cook on low flame for an hour.

Ghee at home

Ragi Halwa

Green ragi (finger millet) is recommended for conditions of blood pressure, liver disorders, asthma and heart weakness. So maximum include ragi in our food.

A tasty sweet recipe with ragi..

Take 1 cup of whole ragi, wash it well, then soak it for 4 hrs. Take a mixie jar, add ragi with clean water, then grind it well, then sieve it to a bowl, you may grind it 2-3 times and take maximum extract. Pour the ragi extract water to a pan, then boil it, stirring is important, once it starts thickening, add ghee, then pour jaggerry juice, continue stirring, add ghee frequently until it become transparent and non sticky, now add nuts and cardamom powder, after a mix turn off flame. Take a cantainer, then grease it with ghee, then add sesame seeds and nuts, add the halwa mix after , then tightly set it with a spoon, keep aside for cooling down, then cut it.

Aval Vilayichath

Poha is the main ingredients in kerala traditional snacks, it has many health benefit too. Poha might help against heart diseases, digestive problems, cholesterol, high blood pressure and cancer. It might also provide energy to our body and help in the brain functioning.

Here a tasty recipe with poha, that can store for days.

Ingredients

rice flakes – 2 cups
coconut – 2 cups
jaggery – 200gm
water – 1/2 cup
cardamom – 3
cumin seeds – 1/4 tsp
coconut pieces – 1 tbsp
cashew nuts – 15
roasted chana dal – 2 tbsp
raisins – 1 tbsp
sesame seeds – 1 tbsp
ghee – 1 tbsp

melt jaggery in 1/2 cup of water,powder cardamom and cumin seeds with some sugar…
To a thick bottomed pan add coconut and saute for 5 minutes on high flame….
add jaggery syrup to the coconut., saute till the jaggery syrup is about to get dry…
add rice flakes and mix well ,add cardamom and cumin powder,mix well in low flame for 3 minutes…
to a tadka pan add ghee and saute coconut pieces, cashews, rasins one by one . then add roasted chana dal and sesame seeds,add all the roasted items to the rice flakes and mix well..
once it is cooled well store it in an airtight container,a healthy snack is ready.
