Malabar Ghee Rice


basmati rice 2cups

ghee 4 to 5 tbsp

cardamom 5

clove 3

cinnamon 3

pepper 4

fennal seeds 1/4tsp

cahews 15gm

raisins 10gm

onion 3

green chilly 2

carrot 1small

salt as per taste

coconut oil 2tbsp

water 4cups


Heat a pan, add ghee and coconut oil together, add carrot grated, fry it well and transfer to a plate, roast cashews, kismis, onion separately. Heat a biriyani pot, add ghee, add fennel seeds and other spices, roast it well, add ginger chopped, onion, saute it well, add rice, mix all well, now add water, cook it well, add required salt and some lime juice, cover the pot and cook it well.Finally add fried items into it.
